What it's all about

Distilling Academy was created to with one goal in mind: To provide accessible, reliable education for distillers to increase their skills and enable them to produce the best possible spirits. 

The truth is, distilling is a blend of art and science. An artistic approach is crucial, but without the tools of science, there is bound to be a lot of trial and error before a distiller's vision is realized. By presenting some of the scientific aspects to distilling in an accessible, visual and engaging way, Distilling Academy aims to empower distillers to be creative and use their newly gained knowledge as a springboard  for innovation and experimentation. If things go wrong in a distillery, they have the potential to go very, very wrong (think explosions, fire, carbon dioxide poisoning and chemical burns). The best method to avoid such hazards, is education! 

To pursue an education to become a distiller, existing options include moving to the UK for specialist Brewing and Distilling Bachelors and Masters degrees, taking a course at a local distillery, or online classes. A full-blown degree is a big commitment, both of time and money. Working with a local distillery is great, if you have one near by that offers a course, you can take a week out to attend it, and you know that you'll get a lot out of it! 

If you don't have years to spend at University, or holiday days saved up to take off work so you're able to attend a distillery class, but you do have a desire to learn more, this is for you. Enroll in Distilling Academy and take courses at your own pace, on your own time, and in your own pajamas.

Get to Know your Instructor

  • Education

    I have a Masters of Brewing and Distilling Science from Heriot Watt University. My thesis was making and analyzing a gin recipe (that was commercialized and has become a best seller). I have a Bachelors of Biology from the University of British Columbia. I've completed courses toward a Diploma in Teaching.

  • Experience

    I've worked for the big guys, as a Whisky Specialist on the Johnnie Walker Blending Team, I've worked for start-up distillers as a Tour Guide, Bottling Line and wax dipping Assistant, Whisky Blending Consultant, Head Distiller and Gin Recipe maker. I've worked in Technical Sales (specializing in yeast, enzymes, barrels etc.) at a Brewery, Winery, Cidery and Distillery Ingredient and Equipment Supplier. Before all of that, I was a Science and Math Tutor. Whatever stage you're at, I've got you covered.

  • Motivation

    Working with start up distillers, I feel their frustration at having big questions, that need big answers, and not having a place to turn to get them! I want to change that, and create a one stop shop to learn about distilling.
